Scalloped Potatoes with Green Onions

- 3 Tbsp. butter
- 1 bunch green onions
- 3 Tbsp. flour
- 2 3/4 c. milk
- 4 pounds potatoes, peeled and thinly sliced
- salt and pepper
- 1/2 c. parmesan

Step 1
Heat oven to 400. Lightly grease 9x13 glass or ceramic baking dish. In a 5-6 qt. saucepot, melt butter on medium. Meanwhile thinly slice green onion, reserving 2 Tbsp.
To butter in saucepot add sliced green onions and cook 5 min or until tender, stirring occasionally. Add flour and cook 1 min, stirring constantly. With wire whisk gradually whisk in milk. Cook on medium 6-7 min or until mixture boils and thickens, stirring constantly. Stir in potatoes, 1 tsp. salt and 1/2 tsp. pepper. Cook 5 min stirring gently; remove from heat.
transfer potato mixture to prepared dish; spreading evenly; sprinkle with parmesan. Cover with foil sprayed with Pam. Bake 1 hour. Uncover dish; reset oven to broil. Broil 6" from heat source 5 min or until parmesan is golden. Sprinkle with reserved green onions.
