Ingredients
- Frosting:
- 1 cup butter
- 2 cups sugar
- 4 egg yolks, unbeaten (set aside whites)
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 2 1/4 cups sifted cake flour
- 1 cup buttermilk
- 4 egg whites
- 1 teaspoon vanilla
- 2 cups freshly grated coconut
- 2 cups heavy cream
- 2 egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup sugar

Step 1
Preheat oven to 375 deg. Cream butter and sugar until fluffy. Add egg yolks one at a time, beating after each addition. Combine all dry ingredients, and add alternately with buttermilk to butter and sugar mixture. Beat egg whites until stiff, then add vanilla and fold into batter.
Pour batter into three 8" or 9" pans. Bake for about 25 minutes. Let cool about 30 minutes. Ice with frosting and cover with grated coconut.
For frosting, whip cream until peaks form, set aside. Whip egg whites and cream of tartar until stiff peaks form, adding sugar gradually until glossy, about 1 minute. Fold cream and meringue mixture together.
To save time, you can use dried coconut. Rinse sugar off coconut with water, wrap in towel, and squeeze to remove excess water. Let dry.
