Chicken Pot Pie Stew - Sweet Tomatoes

Ingredients
- 1 1/2 lb cubed red potatoes (boil for 10 mins and set aside)
- 1 lb chicken cooked and diced into bite size pieces
- 2 tbsp canola oil
- 3/4 lb carrots sliced 1/4 inch
- 1/4 lb celery sliced 1/4 inch
- 1/2 pound pearl onions
- 2 1/2 tsp dried thyme
- 1/2 pound butter
- 1 tablespoon garlic minced
- 3/4 cup white flour
- 5 cups chicken broth
- 2 1/2 tsp salt
- 1 tsp white pepper
- 1/4 tsp black pepper
- 2 1/2 cups whole milk
- 1 1/4 cup whipping cream
- 1/4 lb peas
- 1/2 cup chopped fresh parsley

Preparation
Step 1
In Saucepan pour canola oil and vegetables including Thyme and saute on medium heat approximately 10 minutes until tender. Set aside.
Melt Butter in 5 Quart pot. Add Garlic and saute on medium for 2 mins. Stir in flour and cool on low heat for 5 minutes.
Add broth and spices to pot. Whisk together with wire whip. Heat to a low boil on medium heat and simmer for 5 minutes until thickened. Stir constantly.
Stir in Milk and cream. Simmer for 3 minutes.
Add peas, Parsley, cooked potatoes, vegetables and chicken to broth. heat and serve. Season to taste with Salt and pepper.
