Prize Cookies

Ingredients

• 1 c shortening
• 1 1/2 c sugar
• 3 eggs
• 3 c unsifted flour
• 1 t baking soda
• 1/2 t salt
• 1 9oz package None Such Condensed Mincemeat, crumbled

Preparation

Step 1

Preheat oven to 375. In large mixing bowl, beat shortening and sugar until fluffy. Add eggs, beat well. Stir together dry ingredients. Gradually add to shortening mixture. Mix well. Stir in mincemeat. Drop by rounded teaspoons, 2 inches apart, onto greased baking sheets. Bake 8-10 in or until lightly browned. Cool.

For a more cake-like cookie, substitute 1 1/3 cups jarred Mincemeat for the condensed mincemeat.
