Ingredients

  • 1-3/4 cup flour
  • 3/4 cup sugar
  • 1-1/4 tsp cream of tartar
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 2 ripe bananas, mashed
  • 2 eggs, beaten
  • 1/2 cup vegetable oil
  • 3/4 cup chopped pecans

Step 1

Combine dry ingredients in bowl; make a well in center of mixture. Combine remaining ingredients; add to dry mix, stir just until moistened. Spoon batter into greased muffin pans, filling 3/4 full. Bake at 400o 18 minutes or until golden brown.
