  • 1/2 tablespoon coconut oil
  • 2 cups cauliflower
  • 2 cups leeks
  • 1 tablespoon chocolate nibs
  • 2 tablespoons grated pecorino cheese

Preparation

Step 1

Preheat oven to 375 degrees. Place coconut oil in bowl and warm in microwave for 15 seconds or until thin. Lightly coat baking sheet with cooking spray.

Add cauliflower and leeks to bowl with oil. Toss to coat and season with salt. Transfer to baking sheet and roast for 25 minutes, stir, then cook 20 minutes more.

Remove from oven and scatter chocolate nibs across top, use a spatula to stir to combine. When cooled sprinkle cheese over top.
