Ingredients

  • 2 tbs soy sauce
  • 2 tbs water
  • 2 tbs peanut butter
  • 2 tbs brown sugar
  • 2 tbs cider or rice vinegar
  • 4 tbs wok oil
  • 1 small onion, diced
  • 2 tbs minced garlic
  • 2 tbs minced ginger
  • 2 tbs chopped chives
  • red/ yellow bell pepper (to taste)
  • red pepper flakes (to taste)
  • salt/ pepper
  • 1/2 lb fettuccini or linguini noodles, cooked
  • 1 - 1 1/2 lb cooked shrimp, peeled
  • 2-4 tbs chopped peanuts
  • chopped cilantro, for garnish

Preparation

Step 1

1. In small bowl, whisk together first five ingredients until smooth & set aside
2. heat wok or large skillet over medium heat & add oil. when hot, add onions & cook i minute, then add garlic & ginger stirring & cooking until onion is transparent. Add chives & bell pepper & seasoings & stir fry 2 mins. Add cooked noodles & shrimp & toss to coat.
3. Pour in sauce & peanuts, toss & mix thoroughly & cook until heated through.
4. Garnish with chopped cilantro.
