Ingredients
- 4 zucchini (about 2 pounds)
- 1/2 pound ground beef
- 1/4 cup mayo
- 1/2 cup finely chopped onion
- 2 teaspoons dried parsley
- 1 teaspoon oregano
- 1 teaspoon salt
- 1 teaspoon lemon juice
- 1/4 teaspoon pepper
- 2/3 cup spaghetti sauce

Step 1
Halve zucchini. Scoop out centers, leaving 1/4" shell; place in a shallow baking dish. Coarsely chop zucchini centers; mix with next eight ingredients. Spoon into shells and top with spaghetti sauce.
Bake at 350 degrees for 30 minutes.
