Spinach on Tomato Rounds

Ingredients
- Topping:
- 2 pkgs. (10 oz each) chopped spinach
- 3 big tomatoes
- 1/2 teaspoon garlic salt
- 1/4 cup breadcrumbs
- 1/3 cup chopped green onions
- 4 Tablespoons melted butter
- 1/4 teaspoon salt
- 1/3 cup grated Parmesan
- 1/2 teaspoon garlic powder
- 1/2 teaspoon thyme
- 2 beaten eggs

Preparation
Step 1
Cook and drain the spinach, then peel and slice the tomatoes into 10 to 12 thick slices.
Lay them out in a flat baking dish and sprinkle with the garlic salt. Mix the spinach with the rest of the topping ingredients, and spoon it on top of the tomato slices, sprinkle top with extra breadcrumbs and Parmesan cheese.
Bake at 350 degrees for 15 minutes.
