  • 1-1/2 cups all-purpose flour
  • 3 tsp. baking powder
  • 1/4 tsp. salt
  • 2 eggs
  • 1 cup milk
  • 2 Tbsp. butter melted
  • 1/2 cup crumbled feta cheese
  • 3 Tbsp. snipped chives

Preparation

Step 1

In a bowl, combine the flour, baking powder and salt. In another bowl, whisk the eggs, milk and butter together; stir into dry ingredients just until moistened. Fold in the feta cheese and the chives.
Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 degrees for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers.
