Parmesan Crusted Potatoes and Zucchini 0 Picture

Ingredients

  • 4 small new potatoes, 1 1/2" diameter
  • 2 T butter
  • 2 garlic cloves
  • 1 t. chopped fresh thyme
  • 1 t. chopped fresh rosemary
  • 2 small zucchini, halved lengthwise and cut into 1" chunks
  • 1/4 c parm cheese

Preparation

Step 1

Boil potatoes and cook until tender. Cut in half.

Saute over med. heat butter, garlic and herbs. Slat zucchini and potatoes and place cut side down into pan. Cook until golden brown (don't move).

Preheat broiler. Line sheet pan with foil. Place veggies cut side up on sheet and sprinkle with cheese. Broil until melted.
