Puerto Rican Style Turkey

Ingredients
- In a food Processor grind into paste:
- 1 10 to 12 Pound turkey (soak in 5 gallon bucket filled with salt water-- best if it can soak over night--keep ice on it)
- 10 cloves of garlic
- 2 1/2 teaspoons oregano
- 10 teaspoons salt
- 5 teaspoons black pepper
- 1/4 cup olive oil
- 1/8 cup vinegar
- 4 fresh limes or 1/2 cup lime juice
- 1/2 to 1 cup fresh culantro

Preparation
Step 1
Pull turkey out of salt water rinse and dry. Rub the paste all over the bird. Make sure you get under the skin on the breast meat.
Place in roasting pan. Pour remaining paste over the top of bird. Place in 325 degrees oven and cook for 5 to 5 1/2 hours. the paste on top of bird will blacken. You can cover with foil if this happens. I like the blackened seasoning on top.
