Ingredients
- Sauteed Mushroom Topping:
- 2 lb. brisket, ground
- 4 thin slices Swiss cheese
- 4 hamburger buns
- 1 lb. sliced mushrooms
- 2 sliced garlic cloves
- 1 Tbs. fresh thyme
- 1/4 c. olive oil
- Caramelized Onions:
- 2 Tbs. unsalted butter
- 2 Tbs. olive oil
- 2 onions
- Salt and pepper
- Tomatoes with Sea Salt and Chives:
- 2 lbs. red and yellow tomatoes
- Olive oil
- Sea salt
- Chopped fresh chives
- Bacon with Rosemary:
- 1/2 lb. bacon
- 1 sprig rosemary
- Black pepper
- Herbed Horseradish Mayonnaise:
- 1 c. mayo
- 1 Tbs. prepared horseradish
- 1/4 c. freshly minced herbs (like parsley, basil, chives, scallion)
- 2 Tbs. olive oil
- Squeeze of lemon juice
- Salt and pepper

Preparation
Step 1
Grill burgers and buns.
Saute mushrooms until nicely browned, 8-10 minutes.
Onions: Heat butter and olive oil, add onions, sprinkle with salt and pepper and cook slowly until caramelized, 15-20 minutes.
Tomatoes: Drizzle with olive oil. Sprinkle with sea salt and chives.
Bacon: Lay out bacon on baking sheet, top with leaves of rosemary and cracked pepper. Roast at 400 degrees until crisp, around 10 minutes.
Mayo: Mix ingredients.
