Ingredients
- 6 cups cooked, peeled and grated beets (let cool before grating)
- 1 cup cider vinegar
- 4 cups sugar
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/2 tsp ground allspice

Step 1
Combine all the ingredients in a small dutch oven and bring to a boil. Reduce the heat and simmer, uncovered, for 20 minutes.
Bottle the mixture in sterile jars, leave 1/2 inch headspace and cover with lids while still hot.
Serve the relish with goat cheese and crackers, meats, new potatoes or any meal!
