Jalapeno Potato Casserole

Ingredients
- 6 medium potatoes, cubed, cooked and drained
- 1 small bell pepper, chopped
- 1 jalapeno pepper, chopped
- 1 small jar chopped pimento
- 1/2 stick butter
- 1 1/2 tbs flour
- 1 1/4 cups milk
- 2 cups shredded cheese
- 1 tbs parsley
- 1 tsp garlic powder

Step 1
Salt and pepper to taste
In a medium saucepan saute peppers in butter until tender. Add flour and all other ingredients {except cheese} and mix well over heat. Pour this over potatoes, sprinkle evenly with cheese. Bake at 375* for 20 to 30 minutes. If it seems too dry, add a little milk.
