This is my Mama's Mac Salad, fresh, taste like summer. This is a must for our summer cook outs and we always include it for holiday buffets. We have a big family. We would not all fit around the table. Growing up there were 9 kids.

Photo is from another recipe but looks just like my Mama's Mac Salad.

Note: You could replace green pepper with frozen peas. Add cheese cubed. You could use dill instead of celery seed, or use celery powder. Make it your own.

One more quick note, to make it low-carb, use boiled cauliflower instead of noodles.

  • 1 tbsp salt (for boiling noodles)
  • 2/3 tbsp salt (for salad mixture)
  • 1 tbsp celery seed
  • 1 tsp pepper
  • 1 tsp salt
  • 1 cup mayo
  • 1 cucumber, peeled, cut length wise, seeded with a spoon,
  • then cut lengthwise again (so there are quarter
  • lengths), and diced
  • 1 large green pepper, seeded, diced into small pieces
  • 3 ripe tomatoes, diced
  • 3 scallions, white part only, sliced thinly into small
  • rounds (family does not like onions, but they will eat these)
  • TIP: You can use 1/4 cup water to loosen up the mixture instead of adding more and more mayo.

Preparation

Step 1

Boil noodles according to package (I use Muller's). While noodles are cooking, in large mixing bowl combine all other ingredients, stir. Drain noodles, run under cool water to cool noodles down. Drain thoroughly, add to mixture, stir. Taste for salt, and possibly more celery seed. Chill overnight or at least two hours.
