Ingredients

  • 1 , 1 1/4 lb celery root (celeriac), peeled, cut into 1/2" pieces
  • 6 large red potatoes, peeled, cut into 1" pieces
  • Salt
  • 3/4 cup whipping cream
  • 1/4 cup butter
  • 3/4 package Boursin chives cheese
  • Celery salt

Preparation

Step 1

Place celery rout and potatoes in large saucepan. Cover with water; salt lightly. Boil until very tender, about 15 minutes. Drain vegetables. Mash fairly well, add whipping cream, butter and Boursin. Continue mashing until almost smooth. Season with celery salt and pepper.
Can be prepared ahead (same day). Heat at 300F for 35 minutes.
