Ingredients

  • Pastry:
  • 1 stick unsalted butter
  • 1 stick unsalted margarine
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp almond extract
  • 1/2 cup milk
  • 3 1/4 - 3 1/2 cups flour
  • salt
  • 5 tsp baking powder
  • Icing:
  • 1/2 lb confectioners sugar
  • 2 TB butter
  • 1 TB milk, more if needed
  • almond flavoring to taste
  • food coloring, if desired
  • coconut, for dipping

Preparation

Step 1

For the pastry:

Preheat oven to 350.
In a large bowl, cream butters, sugar, and eggs together. Add extract, milk, flour, salt and baking powder.
Keeping your hands wet, shape a piece of dough into a ball (a little higher in the middle). Bake on an ungreased baking sheet for 13 minutes or until lightly browned.
Cool.

For the icing:

Mix all ingredients (except coconut) together until a frosting consistency is reached. Ice the cooled cookies and dip in coconut.
