A simple island-inspired salsa takes broiled pork chops from ordinary to extraordinary. Simply toss chopped pineapple with diced veggies, balance the flavors with fresh lime juice and voilà, dinner’s ready in under 30 minutes!

- Pineapple Salsa
- 1 can (20 ounces) pineapple
- 1 small red onion, finely diced
- 1 red bell pepper, finely diced
- 1 Granny Smith apple, finely diced
- 2 tablespoons cilantro, chopped
- 1/2 teaspoon lime juice
- Pork Chops
- 4 (5 ounce) center-cut pork chops
- 2 tablespoons olive oil
- Salt and pepper
- Pineapple juice, reserved from 20 oz. can of pineapple

INSTRUCTIONS
1.Preheat broiler to high. Drain pineapple, reserving the juice, then chop. In a medium mixing bowl, combine chopped pineapple, red onion, bell pepper, apple and cilantro, then toss with lime juice. Set aside.
2.Place pork chops on a baking sheet coated with olive oil, then season with salt and pepper.
3.Pour reserved pineapple juice over seasoned pork chops. Broil for 4-5 minutes on each side, until juices run clear and the chops are firm to the touch. Serve with a spoonful of pineapple salsa and sprig of fresh cilantro.
Tip: Speed up the process by preparing your pineapple salsa the night before and keeping it refrigerated, covered, until ready to use.
