Asparagus with Lemon and Parmesan

Ingredients
- 4 tbsp olive oil, plus extra for greasing and serving
- 1/2 oz wholemeal breadcrumbs
- 1 oz grated Parmesan cheese
- 1 garlic clove, finely chopped
- 1 tbsp chopped fresh parsley
- juice and zest of 1 lemon (about 2 tbsp juice and 2 tsp zest)
- 1 lb trimmed asparagus

Preparation
Step 1
1. Heat the oven to 350F and grease a medium baking dish with olive oil. In a small bowl, mix the olive oil, breadcrumbs, Parmesan cheese, garlic, parsley, lemon juice and zest.
2. Lay the asparagus in the dish – you want no more than two layers so that they all have some topping – and then sprinkle on the cheese mixture. Bake for 15-20 minutes until the asparagus are just tender and the topping is beginning the brown. Serve hot with fresh bread and extra olive oil.
