Preparation
Step 1
For filling: Mix cream cheese until smooth and creamy. Add egg and vanilla and beat well. Store in refrigerator until ready to use, up to a few weeks.
For topping: Mix dry ingredients together and cut the butter in until mixture resembles cornmeal in texture. Set aside.
For bread: Sift together the flour, spice, baking soda, baking powder, and salt. Set aside.
Beat together sugar and oil until light. Add eggs, one at a time. Beat in pumpkin. Add dry ingredients alternatively with water to sugar mixture until well blended. Grease one regular size loaf pan and one small one. (Or do 3 small.) Spoon half the batter in each. Spoon a layer of filling over each, sprinkle half of topping mixture. Add rest of pumpkin batter. Finish with rest of topping.
Bake at 350 for 35 minutes for small pan, and 45 minutes for regular pan, until tester comes out clean.
