- 1 cup halved pecans
- 1 1/4 cups unsalted butter, softened
- 1/2 cup demerara sugar, plus extra for finishing
- 2 1/4 cups flour
- 1/2 tsp freshly grated nutmeg
- 1/4 tsp salt

Step 1
Preheat oven to 350*. Toast pecans for 8 to 10 minutes in the oven and allow to cool. Once cool, chop the nuts coarsely.
Beat butter until soft and smooth. Add sugar and mix well.
In another bowl, mix together flour, nutmeg and salt. Stir into the butter mixture along with the chopped pecans.
On parchment, roll out the dough into a square shape about 1/4 inch thick. Place on baking sheet and refrigerate for at least an hour
Once firm, cut dough into 2 inch squares and place on parchment lined baking sheets. Sprinkle with extra demerara sugar and bake for 20 to 22 minutes, rotating the tray halfway through.
