Ingredients
- 4 medium cantaloupes, halved crosswise
- 1 1/2 cups apple juice
- 2/3 cup sugar
- 1/2 cup dry sherry
- 1 Tablespoon lemon juice
- 3/4 teaspoon each ginger and vanilla
- Mint sprigs or tin lime slices to garnish (optional)

Step 1
Scoop pulp from cantaloupes; wrap and refrigerate shells. In a large bowl, combine pulp, apple juice, sugar, sherry, lemon juice, ginger and vanilla. In blender, whirl mixture until smooth. Pour into bowl; cover and, stirring occasionally, chill several hours or overnight. Serve in reserved shells or in soup bowls. Garnish with mint sprigs or lime slices.
