  • Cake Batter:
  • 4 c. cut-up rhubarb
  • 1 1/2 c. sugar
  • 18-20 about 18-20 cut-up marshmallows
  • 1/4 c. shortening
  • 3/4 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1/2 c. milk
  • 1 c. flour
  • 1 tsp. baking powder

Preparation

Step 1

Grease oblong pan or casserole 12x7 1/2 and put in your sugared rhubarb, cut-up marshmallows on top. Put in oven while preparing batter.
Cake Batter: Cream together shortening, sugar and egg. Add vanilla, milk, flour and baking powder. Spread batter on top of rhubarb and bake 375 degrees 45 minutes. Serve with whipped cream.
