  • 2 small zucchini
  • 1 cup cubes soft white bread, crusts removed
  • 1 egg, beaten
  • 1/2 cup onion
  • 1/4 cup Parmesan cheese

Step 1

Preheat oven to 375 F.

Boil water to a rapid boil. Add whole zucchini with ends cut off, boil for 5 minute. Cool zuucchini while prepping the stuffing.

Cut crusts off 5 slices of bread and cube center of bread. Add 1 beaten egg, onion, salt and pepper to taste. Set aside.

Cut the zucchini in half length wise and hollow out the flesh to create a boat. Finely dice the zucchini flesh and add to the bread crumb mixture. Add the Parmesan cheese and mix well. Spoon mixture into the boats to fill, sprinkle with more Parmesan cheese and 3 dollops of butter on each boat.

Bake in a preheated oven at 375 F for 20 to 22 minutes or until golden brown.
