Ingredients

  • 3 cups flour
  • 3 T. grated Parmesan cheese
  • 1 t. salt
  • 1/2 t. baking powder
  • 1/2 t. baking soda
  • 2 eggs
  • 1 cup buttermilk
  • 1/3 cup sugar
  • 1/3 cup butter, melted
  • 1 cup shredded, peeled zucchini
  • 1 T. grated onion

Step 1

In a bowl, combine the flour, Parmesan cheese, salt, baking powder and baking soda. In another bowl, beat the eggs, buttermilk, sugar and butter. Stir into dry ingredients just until moistened. Fold in zucchini and onion.
Pour into a greased and floured 9x5x3" loaf pan. Bake at 350 degrees for 1 hour or until a toothpick comes out clean. Cool for 10 minutes before removing pan to a wire rack.
