Braised Onions

"Braised" or "Caramelized" Onions are an amazing way to add flavor and pizzazz to everyday recipes. As they cook, the natural sugars are released in the onion and the results are sweet golden brown morsels of heaven. Try over a grilled steak, as a topping for homemade pizza or tossed with cooked pasta, a bit of olive oil, and feta cheese. I've also put them in puff pastry bites or on top of crustini with a little bleu or gorgonzola cheese. This recipe is tried and true and amazing.

Ingredients

  • 3 large onions, finely sliced into rings
  • 1 1/2 T unsalted butter
  • 1 1/2 T vegetable oil
  • 1/2 C beef broth
  • 1/2 t sugar
  • 1 t white wine vinegar

Preparation

Step 1

Heat butter and oil in a fry pan over medium heat. Once they begin to bubble, add onions and saute for 10 minutes, stirring occasionally to get a fairly even color.
Stir in remaining ingredients, cover and simmer for approximately 40 minutes until onions are deep brown and all liquid has been incorporated.
