Chicken & sweet corn soup

Ingredients
- 1L (4 cups) chicken consomme
- 2 (about 200g each) single chicken breast fillets
- 1 tbs light soy sauce
- 2 tsp finely grated fresh ginger
- 1 tbs cornflour
- 60ml (1/4 cup) water
- 1 x 420g can creamed corn
- 1 x 300g can corn kernels, rinsed, drained
- 100g shaved ham, thinly sliced
- 2 egg whites
- 1 tsp sesame oil
- 6 green shallots, ends trimmed, thinly sliced diagonally
- Salt & freshly ground black pepper

Preparation
Step 1
Place the consomme and chicken in a large saucepan and bring to the boil over high heat. Reduce heat to low and simmer for 5 minutes or until chicken is cooked through. Transfer chicken to a heatproof bowl. Set aside for 5 minutes to cool slightly. Finely shred.
Add the soy sauce and ginger to the consomme mixture. Place the cornflour in a small bowl and gradually stir in the water until smooth and combined. Gradually stir the cornflour mixture into the consomme mixture. Cook, stirring occasionally, for 2 minutes or until consomme thickens slightly. Add the chicken, creamed corn, corn and ham and cook, stirring occasionally, for 2 minutes or until hot.
Use a fork to whisk the egg whites in a small bowl. Gradually pour the egg whites into the soup, stirring constantly with a wooden spoon.
Cook for 2 minutes or until white ribbons swirl though the soup. Remove from heat.
Add the sesame oil and half the green shallot and stir to combine. Taste and season with salt and pepper. Ladle the soup among serving bowls and sprinkle with the remaining green shallot. Serve immediately.

Really lovely soup! I made this tonight for dinner for a few friends and they were asking for a copy of the recipe, the flavours were amazing, not too overpowering, I rubbed the chicken with Chinese five spice and pan fried it instead of poaching in the chicken liquid and I think it really added to the end result, really yummy and warming, will definately be making again

I leave out the ham and the ginger as I don't like the taste of either. Delicious soup, tastes as good as one you get in a Chinese restaurant. Also this soup freezes really well so great to reheat on nights when you can't be bothered cooking!

Soup was brilliant!
Didn't use consumme, instead I made my own chicken stock with a roast chicken I had in the fridge from the day before. I stripped the chicken bare & made the stock from the body & stuffing.
Skipped on the ginger as I didn't have any, instead I put a little garlic in.
No creamed corn either but it worked out perfect without it.
I used olive oil as I had no sesame oil.
Didn't use spring onions either as I didn't have any in the fridge.
Even changing the recipe like I did, it still worked out amazing, such a simple recipe & now that I've made it once I'll be able to make it a lot quicker next time...it was just the homemade stock that took a while simmering. A++

The tastiest chicken sweet corn soup we've ever tasted! I used half the consommé, using stock to make the rest of the liquid. I didn't have spring onions but next time I will add as think it will make it perfect

I loved this recipe, although I prefer to cook the corn for longer before adding the egg and shallots. We found the corn to be a little too crunchy.

Love this recipe. Will certainly make it again. Probably need more water (as suggested by others). I used spicy sesame oil (which is already in my cupboard), and I find it very tasty. Yum!.

this soup is yummo , might only add one teaspoon of ginger next time as it was a lil to gingery for me , otherwise everything else worked out great guns, thanks

I made this recipe at the last minute for lunch, so I had to make do with the ingredients I had on hand & it turned out great!
I used garlic chives rather than shallots & ginger; I used chicken stock (from massells stock cubes), rather than consomme; I omitted the sesame oil; I whizzed a can of corn kernels, rather than using creamed corn. Despite all these changes, it was totally delicious & really quick to make!

Awesome recipe!! I cooked it in a slow cooker, on high. I used a BBQ chicken from woolworths, 1 litre of chicken stock, 1litre of water and powdered chicken stock, to make this go further, with other ingredients as listed in recipe. I added all the ingredients together except the egg and shallots (added these towards the end of cooking time). Turned out super!! Will definatly make this again and again, but will omit the ham, I do not think this is needed. Highly reccomend this one!! The kids loved it!!

This was very salty. If I were to make this again I'd use low-salt stock. If it weren't so salty it would've been really nice.

Great soup and easy to do. My husband thought it was really nice and would like to have it again. Like others, I didn't add the ham as I didn't feel it necessary. I did use the consomme as recipe stated. I also added whole egg and not just the white. Maybe it's the soy that sets this soup apart from other chicken & corn soups!

This soup was fantastic, it was really easy to make and has great flavour, I didnt add the Ham either and used reduced salt chicken stock as another reviwer said it was a bit salty.
Ill definately be making this one again very soon!

absolutely brilliant! mom forgot to buy some eggs so i left that out and we arent really big on ham so i left that out too and the soup was BRILLIANT! will definately make again and follow someones previous suggestion of making a vegetarian version too :)

Easy to make and probably the best Chicken and Sweetcorn soup I or my guests have eaten, including any restaurant.
The only change I made was increasing the amount of consomme.

This recipe was fantastic!! I didn't add the ham and at the last minute realised I was out of cornflour, but it didn't matter. My guests raved about it, all asked for the recipe and it tasted better than many chinese restaurants versions! This will become a regular fave.

I found this really tasty and easy to make, I didn't include any ham and wouldn't either - it was salty enough. I grabbed vege stock instead of chicken, next time I'll use chicken stock, 1 chicken breast and more corn and see how it goes

Have made this a number of times and it is always very popular. I have made it both with and without the ham. It makes no difference to the overall taste if it is included or not.

Made this tonight. Super easy and turned out great! Just like sweet corn and chicken soup from a Chinese restaurant. I did not add the ham, and halved the soy and sesame oil quantities. I also used minced chicken breast which made it a lot quicker to make. Will definitely make a big pot when the weather gets cooler and freeze some! Also plan to try a batch substituting crab meat for the chicken. Yum! Yum!

My partner has been begging me to make this one for him as he loves this soup, Very easy to make and super delicious. I did the silly mistake of adding salt before tasting it and it came alittle salty but i added some more water and it came out fine!!! I will definitely make this one again, and again :)

Great version of this classic soup. Left out the ham and added extra soy sauce and chillies, but that is just my taste. Point is, it's easy to adjust to the way you like it.

Question: stupid question possibly - but the chicken consomme - found in the soup aisles of the local supermarket, or do I make it from scratch?
I just use chicken stock when I make this soup, tastes great so I am obviously not doing anything too wrong!
