Ingredients
- 1/3 cup flour
- 1 tsp. salt
- 1 tsp. garlic powder
- 1 tsp. Cajun seasoning
- 1 tsp. pepper
- 5 boneless, skinless chicken thighs (or breast)
- 3 Tbsp. olive oil, divided
- 2 medium carrots, chopped
- 1 small onion, chopped
- 1/2 cup chopped green pepper
- 2 garlic cloves, minced
- 1/2 cup white wine or chicken broth
- 1 can cream of chicken soup
- 1/2 cup chicken broth
- Hot cooked rice

Step 1
In a lg. resealable bag, combine the flour and spices. Add chicken thighs, one at a time and shake to coat. In a lg. skillet, brown chicken in 2 Tbsp. oil in batches. Remove and keep warm.
In the same skillet, saute the carrots, onion and green pepper in remaining oil until tender. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan. Stir in soup and broth.
Return chicken to skillet. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until chicken juices run clear. Serve with rice.
