Ingredients
- 1 lb Chicken breast (or tenderloins)
- 2 cups low sodium chicken broth
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup sweet baby peas
- 1/2 cup chopped mushrooms
- 1/4 cup diced yellow onion
- 1/4 cup chopped parsley
- 1 can low fat or fat free cream of chicken or cream of mushroom soup
- 1 tbsp. chopped garlic
- 1/4 cup reduced fat cream cheese
- salt and pepper to taste

Step 1
Place chicken at the bottom of your slow cooker. Mix all other ingredients except cream cheese) in a large bowl and pour on top of chicken.
Cook on low for 5-6 hours.
Mix in cream cheese and cook on high for an additional hour.
If the mixture separates or you want it a little thicker, just mix cornstarch or flour with some water and gradually mix it in until it reaches desired consistency. I like it thicker so I used about 1-2 tbsp. of cornstarch mixed with a little water and slowly added it until it was perfect!
Serve over pasta, rice, risotto, or whatever you like. It was a delicious hearty dinner perfect for a cold night! Enjoy!
