Ingredients

  • 1 1/2 C fresh mushrooms, sliced 1 1/2 cup
  • 1/2 C green onions, sliced 1/2 cup
  • 1/2 C fresh chile pepper, chopped 1/2 cup
  • 2 TBLS butter 2 tbsp
  • 8 corn tortillas 8
  • 4 eggs, beaten 4
  • 2 C milk 2 cup
  • 1 TBLS all-purpose flour 1 tbsp
  • 1/4 tspgarlic powder 1/4 tsp
  • dash hot pepper sauce -
  • 1 1/2 C cheddar cheese, shredded 1 1/2 cup
  • 1/2 C cheddar cheese, shredded 1/2 cup

Step 1

In a large skillet, cook mushrooms, green onions and chile pepper in butter until tender, drain. Divide mushroom mixture evenly among tortillas, spooning it along center of each one. Divide 1 1/2 cups (375 ml) cheese evenly among tortillas. Roll up tortillas. Place, seam sides down, on greased baking dish.

In a bowl, combine eggs, milk, flour, garlic powder and hot pepper sauce. Pour egg mixture over tortilla.

Bake, uncovered, in preheated 350 F (180 C) oven for about 30 minutes or until edges are set and tortillas are golden. Sprinkle 1/2 cup (125 ml) cheese over top. Let stand 10 minutes
