Ingredients

  • Peanut Topping:
  • 1 pkg. yellow cake mix
  • 2 T. water
  • 1/3 cup butter, softened
  • 1 egg
  • 4 cups mini marshmallows
  • 1 pkg. peanut butter chips
  • 2/3 cup light corn syrup
  • 1/4 cup butter
  • 2 t. vanilla extract
  • 2 cups crisp rice cereal
  • 2 cups salted peanuts

Step 1

In a mixing bowl, beat the cake mix, water, butter and egg until blended (batter will be thick). Spread into a greased 13x9x2" baking pan. Bake at 350 degrees for 22-25 minutes or do a toothpick test. Sprinkle with marshmallows. Bake 2 minutes longer. Place on a wire rack while preparing topping.
In a large saucepan, combine the peanut butter chips, corn syrup and butter; cook and stir over medium-low heat until melted and smooth. Remove from heat; stir in vanilla, cereal and peanuts. Spread over marshmallows. Cool completely. Cut with a sharp knife.
