Ingredients
- 2 (12-oz) drained cans Chunk Light Tuna in Spring Water
- 1 cup seasoned breadcrumbs
- 2 large eggs, beaten
- 1/2 cup red bell peppers, diced
- 1/2 cup green bell peppers, diced
- 1/2 cup green onions, chopped
- 1/4 cup Cajun seasoning or spice mix
- 2 Tbsp capers, drained
- 1 tsp hot pepper sauce
- 2 Tbsp oil
- 6 light hamburger buns
- 6 Lettuce leaves
- 6 slices tomato
- 6 slices onions
- Cajun Mayo
- 1/3 cup garlic or plain mayonnaise
- 3/4 teaspoon Cajun seasoning or spice mix

Step 1
1. In a bowl, combine tuna, breadcrumbs and eggs.
2. Add bell peppers, green onions, Cajun seasoning, capers, and hot pepper sauce to tuna mixture; blend well.
3. Evenly divide and shape tuna mixture into six patties.
4. In a large skillet, heat 1 tablespoon of oil until hot over medium-high heat. Cook 3 tuna burgers on both sides until browned and heated through, about 5 minutes. Repeat withn remaining oil and 3 burgers.
5. Meanwhile, whip together mayonnaise and Cajun seasoning until well blended.
6. Spread hamburger buns with Cajun mayonnaise and fill buns with tuna burgers, lettuce, tomatoes and onions
Serving Size: 1 burger
