Ingredients

  • 5 medium sized potatoes
  • 1/2 cup bacon drippings
  • 1 onion, sliced thin
  • 1 green pepper, sliced
  • 1 small can mushrooms, drained
  • 3 slices bacon, cooked and crumbled

Preparation

Step 1

1. Wash potatoes; do not peel. Slice as thin as possible. Pat between paper towels to remove moisture.

2. Melt drippings in skillet; when hot, add potatoes, onions, green peppers and mushrooms. Turn down heat and cook about 25 minutes, until they are crisp on bottom on soft on top. Add bacon and turn potatoes.

3. Cook 5 minutes more. Salt and pepper to taste.
