Ingredients

  • 6 eggs
  • 1 1/2 cups flour
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp herbes de Provence
  • 1/4 cup chopped italian parsley
  • 2 cups whole milk
  • 1 1/4 cups grated Parmesan cheese (5 oz)

Preparation

Step 1

Preheat oven to 400.

In a blender, combine eggs, flour, seasonings and parsley. Blend on medium speed. Turn blender to low and slowly add milk, then the cheese.

Spray a muffin pan with Pam. Pour batter into muffin cups, filling each about 3/4 full. Bake until puffed and golden brown, 20-25 minutes.

Remove onto wire racks. Serve hot or at room temperature.
