Ingredients
- 2 slices whole wheat bread
- 1 cup milk
- 1 cup grated Gruyére cheese
- 1 tablespoon unsalted butter
- sea salt and ground white pepper
- pinches cayenne
- 2 egg yolks
- 3 egg whites

Preparation
Step 1
Preheat oven to 350 degrees.
Using a processor, pulse the bread into crumbs.
In a medium-sized saucepan, scald the milk.
Add the bread crumbs, grated cheese, butter, cayenne, salt and pepper to the milk.
Cook, stirring, over low heat until the cheese melts.
Remove pan from heat and stir in the egg yolks.
Beat the egg whites until stiff. Fold into soufflé mixture.
Pour into a buttered soufflé dish.
Bake for 30 minutes.
