Ingredients

  • Crust:
  • 1 3/4 c. finely crushed chocolate graham crackers
  • (or use chocolate wafer cookies)
  • 6 Tbsp. butter melted.
  • Filling:
  • 1 c. sugar
  • 3 cream cheese softened
  • 4 eggs
  • 1/3 to 1/2 c. Bailey's Irish Cream
  • 3/4 c. mini semi sweet chocolate chips
  • 1 tsp. flour

Step 1

1. Heat oven to 375. Combine all crust ingredients in medium bowl. Press onto bottom and 1" up sides of lightly greased 9" springform pan. Set aside.

2. Combine sugar and cream cheese in large bowl. Beat at medium speed scraping bowl often until creamy. Add eggs one at a time beating well after each addition (1-2 min) DO NOT OVERBEAT!! Stir in Bailey's by hand.

3. Combine 1/2 c. chocolate chips and flour in small bowl; gently stir into cream cheese mixture. Pour batter over crust. Sprinkle remaining chocolate chips over batter.

4. Bake for 45-55 min or until center is set and firm to touch. Cool 10 min. Loosen side of cheesecake by running knife around inside of pan. Cover, refrigerate at least 3 hours.

5. Store refrigerated.
