Ingredients

  • 1 1/4 pounds ground beef
  • 3 cups cooked rice (1 cup uncooked)
  • 1 onion, chopped
  • 1 1/2 teaspoons salt
  • 1/4 cup grated cheddar cheese
  • 4 slices bacon, cooked and chopped
  • 1/4 cup green pepper, chopped
  • 2 cups canned tomatoes
  • 1/8 teaspoon pepper

Preparation

Step 1

1. Sprinkle bottom of casserole with bacon.

2. Brown ground beef; drain and add onion and green pepper and cook until vegetables are tender.

3. Add remaining ingredients, except cheese, and pour into prepared casserole.

4. Sprinkle cheese on top.

5. Bake at 400 degrees, 25 - 30 minutes.
