Crispy Chicken and Rice Casserole

Ingredients
- 1 c uncooked long-grain rice
- 2 c chopped cooked chicken
- 2 (10 1/2 oz.) cans cream of mushroom soup
- 1 (8 oz.) can sliced water chestnuts, drained
- 1 (3 1/2 oz.) can sliced mushrooms, drained
- 1 c chopped celery
- 3/4 c mayo
- 1 sm onion, chopped
- 1/2 c sliced almonds
- 1 T lemon juice
- 1 t salt
- 1 c crushed cornflakes cereal

Preparation
Step 1
Cook rice according to package directions. Stir tog. cooked rice and next 10 ingredients in a bowl. Spoon into a lightly greased 13 x 9 inch baking dish. Sprinkle evenly with cereal. Bake at 350 for 30 min. or until golden and bubbly. Garnish, if desired.
