  • 1/2 cup (1 stick) butter, softened
  • 1 cup sugar
  • 2 eggs, beaten
  • 3 ripe bananas, mashed
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda

Preparation

Step 1

1.Preheat the oven to 350�F.


2.In a large bowl, combine the butter and sugar and beat well. Add the eggs and beat the mixture until light and fluffy. Stir in the bananas.


3.In a medium-sized bowl, combine the flour and baking soda; add to the banana mixture, stirring just enough to moisten the dry ingredients.


4.Lightly grease and flour muffin pans, then fill 2/3 full with batter.


5.Bake for 25 minutes or until a wooden toothpick inserted in the center comes out clean. Great served warm. Makes about 15 muffins.
