Ingredients

  • Crust:
  • 2 envelopes Knox gelatin
  • 2 egg yolks
  • 1/2 cup milk
  • 2 egg whites
  • 1/2 teaspoon vanilla
  • 1/2 cup cold water
  • 1 cup sugar
  • 1 1/2 pounds cottage cheese
  • 1/2 pint whipping cream
  • 17 graham crackers, crushed
  • 2 ounces butter, melted

Preparation

Step 1

1. Dissolve gelatin in water. Beat egg yolks with sugar. Combine water and egg mixture with milk and bring to a boil. Cool.

2. Drain cottage cheese. Beat egg whites until stiff and add to cheese. Beat whipping cream and add to cheese. Add vanilla and gelatin mixture to cheese. Mix together.

3. Pour into prepared graham cracker crust and sprinkle with remaining crumbs. Place in refrigerator several hours before serving.

4. Crust: Combine crumbs and melted butter. Use half of the mixture in the bottom of a 9" square pan and sprinkle the remaining on the top of the filling.
