Ingredients

  • 3 cups flour
  • 3 cups peeled chopped apples
  • 1 3/4 cups sugar
  • 1 cup raisins
  • 1 cup mayonnaise
  • 1/2 cup coarsely chopped walnuts
  • 1/3 cup milk
  • 2 lge. eggs
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • Cool Whip Frosting
  • 1 pkg. vanilla instant pudding (4 serving)
  • 1/4 cup confectioners sugar
  • 1 cup cold milk
  • 1 8oz. container Coolwhip (thawed)

Preparation

Step 1

Grease and flour 2 9" rd. pans.
In lge bowl mix at low speed first 10 ingredients two mins,
or you may find it easier by hand (300 Strokes) batter is very thick. With spoon stir in apples, raisins and walnuts. Put in prepared pans. Bake in 350 deg. oven for 45 mins. or tooth peck comes out clean. Cool in pans 10 mins then on rack until cold. Frost with Cool Whip Frosting.


Cool Whip Frosting
Combine first three ingredients in med. size bowl. Beat 1 min. Let stand 5 mins. then fold in the Coolwhip. Frost cake and refrigerate.
