Ingredients
- 4 c coarsely chopped broccoli
- 1 tbs EVOO
- 2 tsp salt in boiling water
- 1 c finely chopped onion
- 1 c diced ham
- 3-4 oz shredded extra sharp cheese
- 1 pkg (6) English muffins, whole wheat, torn into bite size pieces
- 6 eggs
- 6 egg whites
- 2 c skim milk
- 2 tsp salt
- 1 tsp paprika
- 1/8 tsp cayenne pepper
- 2-3 oz grated Parmesan cheese

Preparation
Step 1
Blanch broccoli in boiling water about 1 minute. Drain and transfer to ice water bath to stop cooking process. Drain.
Heat EVOO and add onion. Cook until soft, about 4 minutes.
In a large bowl combine muffins, onions, ham, cheese and broccoli. Toss together and place in 11x15 baking dish.
Use same large bowl whisk eggs, egg whites, milk and spices. Pour over broccoli mix. Refrigerate overnight.
Bake 375* 45 minutes - Add Parmesan cheese and return to oven for 30 minutes or until set and golden brown. Allow to rest 10-15 minutes before serving.
