Ingredients

  • 6 medium-size green onions, sliced thin (3/4 cup)
  • 1/2 cup grated Parmesan cheese
  • 3/4 teaspoon each dried basil and oregano leaves, crumbled
  • 1/4 teaspoon garlic powder
  • 24 medium-size fresh asparagus spears (about 1 pound) trimmed
  • 3 medium-size ripe tomatoes (about 1 pound) quartered
  • 2 tablespoons water

Preparation

Step 1

Mix green onions, Parmesan cheese, basil, oregano and garlic powder in a small bowl until blended. On a 10 to 12 inch round microwave-safe serving plate, arrange asparagus spoke-fashion with stem ends toward edge of plate and tips overlapping in center. Place tomato quarters in a circular pattern 2 inches from edge of plate. Sprinkle vegetables with water, then the green onion mixture. Cover with vented plastic wrap. Microwave on high 5-7 minutes, rotating dish 1/2 turn once, until vegetables are hot. Let stand covered 3-5 minutes until crisp-tender. Tilt plate and drain off liquid through vent opening.
