Ingredients

  • 6 Tbs. packed brown sugar
  • 2 Tbsp. chili powder
  • 1 Tbsp. oregano
  • 2 1/4 tea. garlic powder
  • 1 tea. salt
  • 1/4 - 1/2 tea. cayenne
  • 1/2 cup ketchup
  • 1/3 cup hot pepper jelly
  • 2 Tbsp. honey
  • 2 slabs baby back ribes (6 lb)

Step 1

Prepare grill for indirect heat cooking.

Combine brown sugar, chili powder, oregano, 2 tea. garlic powder, salt and cayenne, adding extra for more heat. Rub over ribs; place meaty side down, on grill over indirect heat. Cover; cook 15 minutes. Turn over. Cover; cook until tender, about 2 hours.

In saucepan, combine ketchup, jelly, honey and remaining 1/4 tea. garlic powder; over medium heat, bring to a boil. Reduce heat to low; cook until thick, 5 minutes. Brush ribs with glaze several times during last 20 minutes of cooking time.

No-grill option: preheat oven to 325 degrees. Place ribs on pan; rub with sugar mixture. Roast 1 1/2 hours or until tender, brushing with glaze several times during last 20 minutes. Preheat broiler, broil 2-3 minutes.
