  • 9 c. water
  • 3 c. yellow cornmeal
  • 3 tsp. salt
  • 3 c. cold water

Step 1

Heat to boiling 9 c. water in large kettle. Mix 3 cups yellow cornmeal and 3 tsp. salt with 3 cups cold water. Pour into the boiling water, stirring constantly. Cook until thickened, stirring frequently. Cover and continue cooking over low heat for 20 minutes, covered over low heat; then remove lid and continue cooking (low heat) 10 more minutes or until mixture pulls away from sides of pan as you stir. Pour cooked corn meal into 2 loaf pans. When cold, remove from the loaf pans and cut the 'loaf' into 1/2-inch slices. Fry in lightly greased griddle until crisp and golden brown; serve hot.
