  • 3 dozen large mussels
  • 1 lemon
  • 1/4 lb. bacon
  • 1 medium onion
  • 2 tsps. chopped garlic, salt, pepper
  • 2 tablespoons chopped parsley
  • 2 tablespoons butter

Step 1

Scrub mussels carefully. Remove barnacles and beards. Steam mussels in one cup liquid (half water, half wine) to which you've added a few squeezed of fresh lemon juice and white pepper to taste.

When mussels open, remove from liquid and cool, and rinse thoroughly in cold water. Remove any remaining sand and beard.

Dice bacon and onion. Saute bacon until almost crisp. Add onion and garlic, salt, pepper and parsley. Saute' a minute more. Drain bacon mixture to remove excess fat.

Arrange mussels in a layer in a shallow baking dish. Top with bacon mixture. Dot with butter.

Bake at 400 degrees for 8 to 10 minutes. Bacon should brown slightly.
