Bread - Grilled Green Onion Breads

Ingredients
- 1 loaf (1 lb) frozen white or whole wheat bread dough, thawed to room temperature
- 3 Tbsp. extra-virgin olive oil
- 3/4 cup sliced green onions
- 1/3 about 1/3 cup flour

Step 1
With your hands, flatten bread dough on a floured board. Top with the oilve oil and green onions and knead into the dough until incorporated (the dough will be sticky).
Place the dough in a bowl and cover. Let the dough rise in a warm place until doubled, 50-60 minutes.
On a floured board, knead the dough briefly to get out the air. Divide the dough into 12 equal pieces. Roll each piece into a ball and coat with some flour. Shape each ball into a 4-5" round, sprinkling with flour as needed to prevent sticking. Space the rounds evenly on two floured 15x17" baking sheets. Cover loosely with a kitchen towel and let rise until puffy, 20-30 minutes.
Meanwhile, prepare a grill for cooking over medium heat. Oil the grill rack.
Lay the rounds of dough on the oiled grill rack. Cook, turning once, until the breads are browned, about 3 minutes on each side.
Transfer the breads to a basket.
