Apple Cake with Cinnamon Sugar Topping

I love to get up really early when I have guests visiting for the weekend and make this coffee cake. Using canned sliced apples makes it extremely easy to prepare and it's out of the oven before everyone else wakes up for breakfast.

Ingredients
- 2 c. all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 2/3 c. vegetable oil (preferably canola)
- 1 c. sugar
- 2 larg eggs, at room tempature
- 1 c. milk
- 1 tsp vanilla extract
- one 20 oz can sliced apples, drained and patted dry
- 1/2 c sugar mixed with 1 tsp cinnamon

Step 1
Preheat oven to 325 degrees.
Grease and lightly flour a 10 inch tube pan.
In a small bowl, sift together the flour, baking powder, and salt. Set aside.
In a large bowl, on the medium speed of an electric mixer, beat together the oil, sugar, and eggs until light and thick, about 3 minutes. Add the dry ingredients in three parts, alternating with the mik and vanilla, beating after each addition until smooth. In a separate small bowl, toss the apples with half of the cinnamon-sugar mixture, then stir half of the apples into the batter. Pour the batter into the prepared pan. Drop the ramaining apples on top of the batter and sprinkle with the remaining cinnamon sugar. Bake for 60-70 minutes, or until a cake tester inserted in the center of the cake comes out clean. Let the cake cook in the pan for 1 hour, then remove from the pan and cool completely on a wire rack.
