Ingredients
- 1 lb Ground Beef
- 6 oz Chorizo
- 1 Medium Onion, diced
- 1 can Ranch Beans
- 1 can Mild Chili Beans
- 2 can Pinto Beans, drained and rinsed
- 2 cans Stewed Tomatoes
- 1 can Mexican Stewed Tomatoes
- 1 package Chipolte Taco Mix
- 1 bag Trader Joe's Frozen Roasted Corn
- Water as needed to thin

Step 1
In a medium skillet over medium heat, saute onion in oil for about 5 minutes, stirring often. Remove from pan and set aside.
In medium skillet, place chorizo that has been broken into chunks and saute about 10 minutes, stirring often. Remove from heat and remove red liquid that remains. (I pour the mixture onto paper towels and pat until most of the liquid is gone).
Add the ground beef, chorizo and onions to the skillet and cook over medium heat for about 10 minutes, or until the ground beef is cooked throughout.
In a large pot of choice, add the beans, tomatoes and
taco mix. Add the meat and onion mixture and stir until well mixed. Bring pot to a simmer and continue simmering for about 30 minutes. About 10 minutes before serving, add the frozen roasted corn and heat until pot is simmering again.
Top with, grated cheese, sour cream, avocado and crumbled tortilla chips, if desired.
